Vintage K ( name of table wine )*

Production area, Geology:

- The carignan grapes entering in the "vintage K", come from all the lands of our domain; namely, on one hand from parcels located in the Minervois (soils developed based on marl, gravelly marl, some shales) and on the other hand from parcels located on the Saint Chinian (fersiallitic soil).

Vines, yield:

- 100% carignan, from the bottom of the parcels often prolific yield superior to 35hl /ha).

Raising:

- 80% of the production remains in cement vats; 20% are raised in barrels of 3 wines during 5 months.
The raising completed, the 2 vintages are assembled and bottled on the fruit, 6 months after harvest.

Tasting:

- Smell of red berries, black berries, with hints of garrigue.
- Pulpy taste with a few tannins present at uncorking and which smooth out at aeration, characteristic of the carignan.

Service:

- Between 15°c and 16°c maximum.

Red Naïck
( table wine appellation )*


Production area, geology:

- Soils developed with marl covered with shale located in the Minervois, fersiallitic soils in the Saint Chinian.

Vines, yield:

- 60% of cinsault.
- 20% of carignan
- 20% of syrah and grenache.
- The yield is of 30 hl/ha.

Raising:

- The cinsault remains in the vat to keep the fruity flavor and the freshness of the grape.
- The carignan and the syrah are raised 12 months in barrels of 1 or 2 wines to bring complexity.
After assembly and three months spent in vats, the Naïck vintage is bottled.

Tasting:

- Smell of black berries and prunes.
- Well structured taste thanks to a nice minerality and a silky texture, realizing a complex and harmonious taste.

Service:

- Between 16°c and 17°c maximum.

White Naïck (table wine appellation)*

Production area, Geology:

- Soils developed from marls and gravelly marls on blue clay.
- The parcels are located in the area "Minervois", "Minervois La Livinière".

Vines, yield:

- 95% grey grenache.
- 5% macabeu.
- The yield is of 25 hl/ha.

Raising:

- The assembled musts are vinified and raised in barrels of 500L for half of 1 wine and for half of 2 wines, from the Vosges forest.


Tasting:

- Smell of yellow fruits, muscated, citrus and sweet spices.
- The taste is wide, elegant, finely wooded and fresh.

Service:

- Serve at 12°c

Red Minervois(Minervois appellation)

(GIOCOSO) 

Production area, geology:

- Soils developed from marl, gravelly marl on hard limestone, sometimes covered with shale.
- The parcels are located in the area "Minervois" et "Minervois La Livinière".

Vines, yield:

- 65% grenache
- 20% syrah
- 15% carignan
- The yield is of 28 hl/ha

Raising:

- The grenache, excellent grape of the great southern wines, remains in a vat to preserve its natural qualities.
- The carignan and syrah are raised 12 months in barrels, for half new and half of a wine.

Tasting:

- Flat, brilliant wine, with elegant tannins; the well integrated wooden taste structures the whole and ensures a smooth taste.

Service:

- Serve at 17°c


Red Minervois La Livinière
("Minervois La Livinière" appellation)

(Prima Donna)

Production area, geology:

- Soils developed on lacustrine land and marine limestones
- All of the parcels are located on the vineyard "Minervois La Livinière".

Vines, yield:

- 40% syrah
- 50% grenache
- 10% carignan
- The yield is of 25 hl/ha

Raising:

- The grenache is raised 12 months in 1/2 muid to exacerbate the elegance and refinement of the grape.
- The carignan and syrah are raised 12 months in new barrels.

Tasting:

- The taste reflects a rounded, smooth and suave texture, very strong fruity taste (raspberry, blackberry); spices appear in the middle of the tasting, the filling is strong without softness, a mineral touch comes to complete the length of this wine.

Service:

Red Minervois ("Minervois" appellation)

(Maestoso)

Production area, geology:

- Soils developed from marl, gravelly marl on hard limestone, sometimes covered with shale.
- The parcels are located in the area "Minervois" and "Minervois La Livinière".

Vines, yield:

- 1/3 grenache
- 1/3 syrah
- 1/3 carignan
- The yield is of 25 hl/ha

Raising:

- The grenache, excellent grape of the great southern wines, in 1/2 muid to develop its elegance and its delicate character.
- The carignan and syrah are raised 12 months in new barrels.

Tasting:

- The body color is of an intense and deep dusky red. The wooden tasted melts and associates itself perfectly to hints of garrigue pepper and kirsch. Both powerful and refined it astonishes because of its density and the silkiness of its tannic structure.
