THE HARVEST

After a first sorting at the parcel, the gathering is done in small netted crates of 12kg;
they are then refrigerated at 10°C;
the grapes, after a passage on two sorting tables, reach the vat completely free from green materials.




THE WINE-MAKING PROCESS

RED:

80% of our production is processed in a cement vat of cylindrical shape.

For old Grenaches, intended for the development of our "Mivervois La Livinière" the fermentation and the period in vat take place in open barrels of 500L, positioned standing (on the taitillet).

All our interventions (shedding, raising, pigeage) are done after tasting of the musts, and following a reflection always in line with the parameters described in the philosophy paragraph:" fruit, finesse purity and complexity. "


WHITE:

Our harvest of grey Grenache and Macabeu cleared from all impurities, is pressed at the vertical press giving very clear juices.

After sludge removal the juices are vatted in 500L barrels where their fermentation and their raising will be done.
